Cooking With Wine – Italian Style Pork Roast

 

A new way of cooking with wine

Welcome to our blog series on cooking with wine in which we continue our culinary adventure with Italian Style Pork Roast. When you have a craving for comfort food, try this recipe. It’s so easy because it’s one of those “fix it and forget it” meals and it’s also delicious!

 

Before we begin, there’s one thing that we find really handy and that’s to know a few things up front. First, how long will it take to prep, cook, set aside, refrigerate, etc. before it’s ready to eat? Second, how many people will it serve? Lastly, the grocery list.

 

Nice to know details

As a general rule, set aside the following times:

  1. 15 minutes preparation
  2. 4 and 1/2 hours cooking
  3. Serves 8 – 10 people

 

Grocery List

  • 1 4-pound pork roast
  • 2 tablespoons of Italian seasoning
  • 1 and 1/2 teaspoons of sea salt
  • 2 teaspoons of ground black pepper
  • 2 tablespoons of minced garlic
  • 1 teaspoon of crushed red pepper flakes
  • 2 teaspoons of crushed fennel seeds
  • 2 tablespoons of dried rosemary
  • 1 28-ounce can of diced tomatoes
  • 8 ounces of sliced button mushrooms
  • 2 cups of chopped onions
  • 1/2 cup of dry red Italian wine
  • 1/3 cup of tomato paste

 

Cooking

Just to be safe, it’s a good idea to have an extra bottle of the red wine you’re using in the recipe. You might want to have a few sips during the cooking stage. Also, you’ll need a bottle to be served with dinner!

 

Prepare the ingredients

The Rub

Combine in a medium sized bowl

  • 2 tablespoons of Italian seasoning
  • 1 and 1/2 teaspoons of sea salt
  • 2 teaspoons of ground black pepper
  • 2 tablespoons of minced garlic
  • 1 teaspoon of crushed red pepper flakes
  • 2 teaspoons of crushed fennel seeds
  • 2 tablespoons of dried rosemary

 

Mix together well.

 

The Pork

  • Massage the rub into the pork and place it in a Dutch oven

 

The Sauce

Combine in a large bowl

  • 1 28-ounce can of diced tomatoes
  • 8 ounces of sliced button mushrooms
  • 2 cups of chopped onions
  • 1/2 cup of dry red Italian wine
  • 1/3 cup of tomato paste

Mix together well.

 

Roasting

  • Pour the sauce over and around the pork
  • Roast covered at 325 degrees Fahrenheit for 3 and 1/2 hours
  • Remove lid and continue to roast uncovered for 1 hour

 

Serving

  • Remove the pork from the Dutch oven and place on a plate
  • Shred the pork
  • Remove the sauce and place in a serving bowl

 

Try it with mashed potatoes and peas.

 

Pairing

We recommend serving this meal with a bottle of your very own Italian DIY craft red wine. If you’ve used a particular one during cooking, serve the same one with dinner. This always helps to enhance both the flavours in the dish and also the wine.

 

Tips

  • This dish freezes beautifully so you can enjoy it over and over again
  • This recipe also works in a slow cooker
  • If you want a little more spice, use a hot Thai chili sauce instead of the tomato paste
  • The pork may slice with a very sharp knife but when pulled, it soaks up more delicious sauce
